I've seen some advice about deleting the whole history at once, which involves: customize and control>delete history.... well where the hell is that?
the only chioce I have is 'History' where I can delete 1 day at a time. And where do I set it up to delete on closing?

The "Customize and Control" menu is otherwise known as the "Wrench menu". If you hover your mouse over the Wrench it says "Customize and control Google Chrome".

However, to delete all of your history at once, use: Wrench menu > Options > Personal Stuff > Clear Browsing Data, and select "Clear browsing history".

The shortcut to get to this screen is Ctrl+Shift+Del
